White wine is made predominantly from white grapes, sometimes also from red or blue ones, since for white wines the grape must be fermented without the skins and peduncles, containing the main proportion of colour pigments.
White wines are characterized by their fruit acids and aromas. Tannins play a role only upon storage in a wooden barrel for rounding off the taste. Simpler white wines are stable for two to three years; high-quality white wines and top-quality wines, e.g. those from Burgundy, for up to ten years or longer.
White wine perfectly fits with fish dishes and seafood - and a cooled glass of white wine in summer is a source of refreshment and a special treat.
