Prosecco is produced from white grapes originally from a grape variety from Veneto. Still nowadays the cultivation area of the DOC Prosecco is in the Venetian city of Treviso. Prosecco is available as a sparkling wine and often is not produced in the more labour-intensive bottle fermentation process, but by means of tank fermentation. This so-called semi-sparkling wine, also known as Prosecco Frizzante has a lower content of carbonic acid than other types of Prosecco.
Sparkling wine, too, is won from white grapes and represents a refined stage of wine yielded by alcoholic fermentation. Basic wines for the sparkling wine production as a rule are not picked for their sugar content but on the basis of their acidity. This fine, fresh acerbity in the end acts like a flavour enhancer. The sparkling wine takes on a very fine, well-balanced taste. High-quality sparkling wines are processed on the rocking console, just like Champagne.
Prosecco and sparkling wine are great refreshing aperitifs - whether as pre-dinner appetizers or on special festive occasions.
