Red wine is produced from blue or red grapes. In this process the red colour is due to the grape pulp in few cases only. As a rule it is yielded by the production process of the mash fermentation, during which the grape as a whole - with skin, seeds and peduncles - is fermented. During the fermentation the colour pigments contained in the skins dissolve in alcohol.
The character of a red wine is greatly influenced by the tannins, which, along with many aromatic substances, are contained in the skins. The maturing period of red wines therefore is longer than that of white wines; the tannins only gradually lose their acerbity and reservedness. Tannins and acids, however, have a preserving effect, so that the potential storage time for red wines is clearly longer, in the case of various top-quality wines even 20 years or more.
Optimum storage is guaranteed at temperatures between 10 and 13 degrees centigrade and at high atmospheric humidity (60 to 70 percent), when stored in a dark place. These conditions should be changed as little as possible and the wines, moved as little as possible.
Already since ancient times, red wine has been known as an important drink, and still today a glass of good red wine is pure pleasure.
