The Portuguese dessert wine known all over the world above all comes from the best slate soils found in the valley of the river Douro in the North-West of Portugal and is cultivated on 33,000 hectares.
The short fermentation period of the red and white grapes, pressed with their skins, containing tannins and colour pigments, is stopped by adding neutral ethyl alcohol, having an alcohol content of 77 percent by volume. An alcohol content between 19 and 22 percent by volume and a residual sweetness between 40 and 60 gr. of sugar per litre characterize the best Ports, which are then finished off in different styles such as Vintage Port, Late Bottled Vintage, Ruby or White Port.
Port is frequently drunk cooled, mostly as a dessert wine, but it is exquisite also as an aperitif.
